Date palm jaggery is a type of jaggery that is made from date palm sap. Date palm sap is collected from the Bengali month of Agrahayan to the month of Falgun, and the sap is thickened by heat into hard patali jaggery. By type, date palm jaggery can be divided into jhola (liquid) jaggery, danagur (granular) jaggery, patali, chitagur and so on.
Date palm sap and jaggery are very delicious. In winter, payesh, various kinds of winter pitha, taler pitha (palm cake), date palm jaggery jilapi and so on are made with date palm sap and jaggery. By taste and quality, date palm jaggery is known as patali, nolen gur and hazari gur.
