When making patali jaggery, the sap is boiled down thicker than lali jaggery and then taken off the stove. Once taken off, a small amount of jaggery in one corner is rubbed with a wooden spatula to make seeds. When that seed is mixed well with all the rest of the jaggery, the jaggery begins to set. Finally, thangur or patali jaggery is made.
